Happy National Donut Day Everyone!  Don't feel guilty about eating a donut today because it is practically expected!

Here is my favourite recipe for a great little bite sized, moist and delicious donut hole. The secret ingredient that makes these donut holes so moist is the ricotta cheese I add. Roll them in a simple sugar and cinnamon mix and you are good to go!  You can even add a dipping sauce of your choice like melted Nutella or eat them plain with a nice fresh coffee or latte on the side. 

I like making these donut holes when I have guests because first off they are so much fun and second, they only have to sit for 30 minutes and you can fry them fresh as coffee is coming out!  They are always a hit with my guests.  If you don't have time to drain the ricotta, put it into a sieve and press out as much liquid as you can.  I have done this and it works well.

Donuts are so much fun because they are a treat that reminds most people of their childhood.  Whenever I make these donuts I am immediately reminded of special occasions at my Nonna's house when we were kids.  The smell of oil frying literally transports me back to that time.  The simple flavour of sugar on freshly fried dough is one of my favourites. 

I hope you enjoy these donuts and I hope they give you the same great feeling I get when I make them for my family and friends! 





Ricotta Donut Holes
Yields: 3 dozen

Ingredients:
1 15 ounce container ricotta cheese
4 eggs
1 tablespoon vanilla
1 1/2 cups all-purpose flour
1/2 cup granulated sugar
2 tablespoons baking powder
1/2 teaspoon salt
Cooking oil for frying
Equal parts granulated sugar or cinnamon/sugar combined for coating



Method:
1. Put your ricotta cheese into cheese cloth and wring it out tightly.  Put it into a colander with a plate underneath and put into the fridge overnight.  The ricotta should be dry to make sure the donuts are not too moist.
2.  In a large bowl beat ricotta cheese with an electric mixer on medium speed until smooth. 
3.  Add the eggs and vanilla and beat until combined. 
4.  Add flour, granulated sugar, baking powder, and salt. Beat on low speed until just combined. 
5.  Let batter stand for 30 minutes. 
6.  Drop batter by well-rounded teaspoonfuls, four or five at a time, into deep fryer at 365 degrees F. Cook each batch for 2-1/2 to 3 minutes or until golden brown, turning once. 
7.  Remove donuts with slotted spoon and drain on paper towels. Repeat with remaining batter. Cool completely. Coat donuts in cinnamon/sugar mixture.
